Ingredients
2 tablespoons butter
1 tablespoon olive oil

2 medium carrots, sliced
2 celery stalks, chopped

1 pound boneless skinless chicken breasts
6 cups chicken broth
1 cup long-grain white rice
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
1 cup heavy cream
2 tablespoons lemon juice
1/4 cup fresh parsley, chopped
Instructions
1. Heat the butter and olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook until softened.
2. Stir in the minced garlic and cook for about 1 minute until fragrant.
3. Add the chicken breasts, thyme, bay leaf, salt, and black pepper to the pot.
4. Pour in the chicken broth and bring the soup to a gentle boil.
5. Reduce the heat to a simmer and cook the chicken until tender and fully cooked.
6. Remove the chicken from the pot and shred it using two forks.
7. Add the rice to the simmering broth and cook until tender.
8. In a small bowl, whisk the flour with a little broth until smooth, then stir it into the soup.

Notes
