Description

This Creamy Apple Raisin Coleslaw features crisp shredded cabbage, thinly sliced apples, and sweet raisins tossed with a light, tangy dressing made from Greek yogurt, mayonnaise, lemon juice, and mustard. The dish is finished with sliced almonds and green onion for a satisfying crunch and fresh flavor.

Perfect for busy weeknights, potlucks, or as a healthy side dish to grilled meats and hearty mains, this coleslaw comes together in minutes and improves with a short chill in the refrigerator.

Ingredients

Scale
  • 4 cups head white cabbage, finely shredded, about half a small head
  • 1 apple, thinly sliced, a crisp Granny Smith or Honeycrisp works best
  • 1 carrot, finely shredded
  • 3 tablespoons raisins, for natural sweetness and chewiness
  • 1 green onion, sliced
  • 3 tablespoons sliced almonds, raw or lightly toasted for added crunch
  • 4 tablespoons Greek yogurt, plain, full-fat or non-fat
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard, Dijon or yellow
  • 3 tablespoons fresh lemon juice, from approximately half a lemon
  • 1 teaspoon honey
  • to taste salt
  • to taste black pepper
  • pinch chili flakes, optional, for a subtle heat and depth

Instructions

  1. Combine the vegetables and fruit: Add the shredded cabbage, thinly sliced apple, shredded carrot, raisins, green onion, and sliced almonds to a large mixing bowl and gently toss to combine.
  2. Make the dressing: In a separate small bowl, whisk together the Greek yogurt, mayonnaise, mustard, fresh lemon juice, and honey until the mixture is smooth and creamy, about 1 to 2 minutes.
  3. Season the dressing: Taste the dressing and add salt, black pepper, and a pinch of chili flakes if desired, whisking to combine well.
  4. Combine everything: Pour the creamy dressing over the coleslaw mixture and toss gently but thoroughly until every component is evenly coated.
  5. Chill before serving: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for 20 to 30 minutes, allowing the flavors to meld and the cabbage to soften slightly.
  6. Serve fresh: Give the coleslaw a final gentle toss and serve cold for the best texture and taste.
