  • 2 lbs Yukon Gold or Russet potatoes, peeled and diced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups milk (or half-and-half)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 cup green peas (optional)
  • Fresh parsley, for garnish

Instructions

  1. Boil the potatoes – Place diced potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 10-15 minutes until fork-tender. Drain and set aside.
  2. Prepare the sauce – In a large skillet, melt butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly.
  3. Add the milk – Slowly pour in the milk while whisking until the mixture thickens into a smooth sauce.
  4. Season – Stir in salt, black pepper, and garlic powder (if using).
  5. Combine – Add the cooked potatoes and gently stir until they are well coated in the sauce. If using green peas, stir them in now.
  6. Serve – Remove from heat, garnish with fresh parsley, and enjoy warm!
