1 1/2 cups fresh or frozen cranberries

2 tablespoons coarse sugar

1 tablespoon powdered sugar for garnish


Instructions

1. Preheat the oven to 350°F and grease an 8-inch baking dish or cake pan.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

3. In a separate large bowl, whisk together the cottage cheese, eggs, melted butter, orange juice, orange zest, and vanilla extract until combined.

4. Gradually add the dry ingredients into the wet ingredients and stir gently until no dry streaks remain.

5. Fold the cranberries into the batter carefully to avoid crushing them.
