1 tablespoon olive oil

¾ cup sliced almonds

2 garlic cloves, minced

1 small shallot, finely diced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

½ teaspoon kosher salt

¼ teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and prepare a bowl of ice water nearby.

2. Add the green beans to the boiling water and blanch for 3 to 5 minutes until bright green and crisp-tender.

3. Transfer the green beans immediately to the ice bath to stop the cooking process. Drain well and pat dry.

4. Heat a large skillet over medium heat and toast the sliced almonds for 3 to 5 minutes, stirring frequently until golden brown. Remove the almonds from the skillet and set aside.

5. In the same skillet, melt the butter with the olive oil over medium heat.

6. Add the diced shallot and sauté for 2 to 3 minutes until softened.

7. Stir in the minced garlic and cook for 30 seconds until fragrant.

8. Add the green beans to the skillet and toss well to coat in the butter mixture.

9. Season with salt and black pepper and sauté for 3 to 4 minutes until heated through.

10. Stir in the toasted almonds, lemon juice, and lemon zest.

11. Toss everything together gently and cook for 1 additional minute.

12. Transfer to a serving dish, garnish with fresh parsley, and serve warm.
