1/2 cup unsalted butter softened

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 tsp vanilla extract

1/2 cup brewed coffee cooled

1/2 cup buttermilk

1/2 cup unsalted butter softened for filling

2 cups powdered sugar

1 tbsp brewed coffee

1 tsp instant coffee granules optional

1 tsp vanilla extract

pinch salt

2 tbsp heavy cream


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Whisk together dry ingredients.

3. Beat butter and sugars until fluffy.

4. Add eggs and vanilla.

5. Mix coffee with buttermilk.

6. Combine wet and dry ingredients.

7. Portion batter onto trays.

8. Bake 10–12 minutes and cool.

9. Prepare filling by beating butter and sugar.

10. Add coffee, vanilla, and cream.

11. Pair cakes and pipe filling.

12. Assemble sandwiches.

Notes

Use room temperature ingredients.

Do not overmix the batter.

Chill assembled pies before serving.
