1 lb chicken breast or thighs cut into bite-sized pieces

1 tablespoon soy sauce

1 tablespoon cornstarch

1 teaspoon sesame oil

1/2 teaspoon white pepper

1/3 cup low sodium soy sauce

2 tablespoons oyster sauce

2 tablespoons hoisin sauce

2 tablespoons rice vinegar

2 tablespoons brown sugar or honey

1 tablespoon cornstarch

1/2 cup chicken broth or water

1 teaspoon sesame oil

1 teaspoon fresh grated ginger

2 cloves garlic minced

2 tablespoons vegetable oil

1 cup broccoli florets

1/2 cup red bell pepper diced

1/2 cup green onions sliced

1/2 cup edamame

3/4 cup roasted cashews


Instructions

1. In a bowl, mix chicken with soy sauce, cornstarch, sesame oil, and white pepper. Let marinate for 10–15 minutes.

2. In another bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, cornstarch, broth, sesame oil, ginger, and garlic.

3. Heat 1 tablespoon oil in a wok or skillet over medium-high heat. Cook chicken until golden and fully cooked, then remove.

4. Add remaining oil and stir-fry broccoli for 2 minutes. Add bell peppers and edamame, cooking another 2–3 minutes.

5. Return chicken to the pan and pour in the sauce. Stir continuously until thickened.

6. Add cashews and toss for 1–2 minutes.

7. Garnish with green onions and serve hot.

Notes

Use high heat to achieve the best stir-fry texture and flavor.

Add cashews at the end to keep them crunchy.
