  • 1.5 pounds baby potatoes (Yukon Gold or red potatoes), halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley (optional, for garnish)
  • Salt & pepper to taste

  • Sour cream for topping

Instructions

  1. Prep the Potatoes:
    Wash and scrub the baby potatoes. Slice them into halves or quarters, ensuring uniform size for even cooking.

  2. Season and Coat the Potatoes:
    In a mixing bowl, toss the potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.

  3. Roast the Potatoes:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread the potatoes evenly on the sheet. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

  4. Add the Cheese:
    Remove the potatoes from the oven, sprinkle the shredded cheddar and mozzarella cheese over them, and return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.

  5. Garnish and Serve:
    Remove from the oven and garnish with fresh parsley. Serve immediately and enjoy!
