Ingredients
Scale
- 1 head cauliflower, cut into thick steaks about ½-inch thick
- 4 tablespoons olive oil, for brushing and roasting
- 2 tablespoons grated Parmesan cheese, for the seasoning blend
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon Italian herbs
- Salt and pepper, to taste
- 50 grams mozzarella cheese, grated for melting
- 3 tablespoons marinara sauce, or more to taste
- 4 cherry tomatoes, halved
- Fresh basil, for garnish
- 2 slices salami, optional
- Optional toppings, mushrooms, olives, bell peppers, pepperoni, caramelized onions
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the cauliflower: Cut the head of cauliflower into thick steaks about ½-inch thick, keeping the core intact so the steaks hold together during roasting.
- Prepare the seasoning: In a small bowl, whisk together olive oil, grated Parmesan, garlic powder, smoked paprika, Italian herbs, salt, and pepper until well combined.
- Brush the steaks: Place the cauliflower steaks on the prepared baking sheet and brush both sides generously with the oil and seasoning mixture.
- Roast until golden: Bake for 20 to 25 minutes, flipping the steaks carefully with a wide spatula halfway through, until they're golden brown and tender on the edges.
- Add marinara sauce: Spoon about ¾ tablespoon of marinara sauce over each cauliflower steak, spreading it gently to avoid sogginess.
- Layer with cheese: Sprinkle the grated mozzarella evenly over each steak so it melts beautifully in the oven.
- Top with pizza ingredients: Add your chosen toppings, such as halved cherry tomatoes, salami slices, or other pizza favorites, distributing them evenly across the steaks.
- Final bake: Return the baking sheet to the oven for 5 to 7 minutes, until the mozzarella is melted and bubbly and the edges are crispy.
- Garnish and serve: Remove from the oven and finish with fresh basil, then serve immediately while the cheese is hot and the cauliflower is at its crispiest.
