Ingredients

Scale
  • 1 Italian bread loaf, halved lengthwise, the base for your creation
  • 2 chicken breasts, cut into small pieces, about 1 inch cubes for even cooking
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili flakes, adjust to your spice preference
  • to taste salt and black pepper
  • 1/2 cup oil, for cooking the chicken
  • 3/4 cup buffalo sauce, Frank's RedHot or your favorite brand
  • 3 to 4 tablespoons cream cheese, softened, for creaminess
  • 4 tablespoons butter, softened, for the garlic mixture
  • 4 cloves garlic, minced, fresh for the best flavor
  • 1 tablespoon fresh parsley, chopped, for garnish
  • 1 cup mozzarella cheese, shredded
  • Optional toppings, extra chili flakes, blue cheese crumbles, or sliced jalapeños

Instructions

  1. Season the Chicken: In a small bowl, combine paprika, garlic powder, onion powder, chili flakes, salt, and black pepper. Add the cut chicken pieces and toss until evenly coated with the spice mixture.
  2. Cook the Chicken: Heat oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for 8 to 10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through.
  3. Create the Buffalo Mixture: Pour in the buffalo sauce and add the cream cheese to the pan with the cooked chicken. Stir continuously for 2 to 3 minutes until the cream cheese melts and creates a creamy, well-combined sauce coating all the chicken pieces.
  4. Make the Garlic Butter: In a small bowl, mix softened butter with minced garlic, garlic powder, chili flakes, and chopped parsley until smooth and fragrant.
  5. Prepare the Bread: Place the halved Italian bread on a baking sheet cut-side up, ready for topping.
  6. Apply Garlic Butter: Brush the garlic butter mixture generously over both halves of the Italian bread, ensuring even coverage across the entire surface.
  7. First Bake: Bake at 375 degrees Fahrenheit for 5 to 7 minutes until the bread is lightly crispy and the garlic butter is fragrant.
  8. Add Toppings: Remove the bread from the oven and carefully top each half with the creamy buffalo chicken mixture, spreading it evenly, followed by the shredded mozzarella cheese scattered over the top.
  9. Final Bake: Return to the oven and bake for 8 to 10 minutes until the mozzarella is melted and bubbly with light golden edges.
  10. Garnish and Serve: Remove from the oven and sprinkle extra fresh parsley and chili flakes on top for a pop of color and heat, then slice and serve warm.
