Ingredients
Scale
- 3 ripe bananas, mashed, the riper the better for natural sweetness
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon cinnamon
- 0.5 cup melted butter or oil
- 0.5 cup brown sugar
- 0.5 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 0.5 cup milk or yogurt, yogurt adds extra moisture and tang
- 1.5 cups fresh blueberries
- Optional toppings, brown sugar and extra blueberries for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a standard muffin tray with paper liners.
- In a large bowl, mash the ripe bananas until mostly smooth, then add the melted butter, brown sugar, granulated sugar, egg, vanilla extract, and milk. Mix until well combined and smooth.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly distributed.
- Gently add the dry ingredients into the wet ingredients and stir until just combined, being careful not to overmix. Fold in the fresh blueberries carefully to avoid crushing them.
- Divide the batter evenly among the muffin liners, filling each about three-quarters full.
- If desired, top each muffin with a few extra blueberries and a light sprinkle of brown sugar for added texture and sweetness.
- Bake for 20 to 24 minutes, or until golden brown and a toothpick inserted into the center comes out mostly clean.
- Let the muffins cool slightly in the pan before transferring to a wire rack to cool completely.
