    • 1/2 cup vegetable oil
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3/4 cup buttermilk
  • For the Cherry Filling:
    • 1 1/2 cups cherry preserves or pie filling
    • 2 tablespoons Kirsch (optional)
  • For the Whipped Cream Frosting:
    • 2 cups heavy whipping cream
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnish:
    • 1/2 cup fresh cherries
    • 1/2 cup chocolate shavings

Instructions

  1. Prepare the Cake Layers: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Sift flour, cocoa, baking powder, baking soda, and salt. In a separate bowl, mix sugar, oil, eggs, and vanilla. Gradually add dry ingredients and buttermilk. Bake for 25-30 minutes. Cool on a wire rack.
  2. Make the Cherry Filling: Combine cherry preserves with Kirsch (optional) and chill.
  3. Prepare Whipped Cream Frosting: Whip cream until it thickens, adding powdered sugar and vanilla until stiff peaks form.
  4. Assemble the Cake: Slice cakes horizontally for four layers. Alternate layers of cake, cherry filling, and whipped cream. Garnish with cherries and chocolate shavings.
  5. Chill and Serve: Refrigerate for at least 1-2 hours before serving.

Notes

  • Use fresh whipped cream for the best flavor and texture.
  • Kirsch adds authentic flavor but is optional.
  • The cake layers can be made a day ahead if needed.
