Ingredients
1 cup water
1/2 cup unsalted butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup all-purpose flour
2 large eggs
1/3 cup Biscoff spread
1 teaspoon vanilla extract
1 cup granulated sugar
1 tablespoon ground cinnamon
2 cups vegetable oil
Instructions
1. In a saucepan, combine water, butter, sugar, and salt. Heat until butter melts and mixture simmers.
2. Add flour all at once and stir until a thick dough forms and pulls away from the pan.
3. Let the dough cool for 5 minutes.
4. Add eggs one at a time, mixing until smooth and glossy.
5. Stir in Biscoff spread and vanilla extract until fully combined.
6. Heat oil to 350°F (175°C).
7. Pipe small dough balls into hot oil using a piping bag with a star tip.
8. Fry for 3–4 minutes until golden brown, turning occasionally.
9. Remove and drain on paper towels.
10. Mix sugar and cinnamon, then roll warm bites in the mixture.
11. Serve immediately.
Notes
Make sure the oil temperature stays consistent at 350°F to avoid greasy or undercooked bites.
Do not add eggs while the dough is too hot, or they may scramble.
