Perfect for busy weekday mornings or a satisfying weekend brunch, this sandwich comes together quickly and delivers cafe-quality results right in your own kitchen.

Ingredients

Scale
  • 1 sesame bagel, sliced in half
  • 2 large eggs, room temperature works best
  • 1 tablespoon chives, chopped
  • 1 pinch red pepper flakes, for a subtle kick
  • salt and black pepper, to taste
  • 2 slices cheese, cheddar, gouda, or your favorite melting variety
  • 2 lettuce leaves, fresh and crisp
  • 2 slices tomato, ripe and juicy
  • 4 slices crispy bacon, cooked until golden
  • 2 thin slices red onion, for a sharp bite
  • Optional toppings, avocado slices, sriracha or hot sauce, sautéed mushrooms, or fresh herbs such as cilantro or parsley

Instructions

  1. Whisk the Eggs: In a small bowl, whisk together the 2 large eggs with the chopped chives, red pepper flakes, salt, and black pepper until the mixture is well combined and slightly frothy.
  2. Heat the Skillet: Place a large nonstick skillet over medium heat and let it warm for about 1-2 minutes until a drop of water sizzles on the surface.
  3. Add the Egg Mixture: Pour the whisked egg mixture into the heated skillet and let it cook for 2-3 minutes until the bottom begins to set and turn lightly golden.
  4. Position the Bagel: Place both bagel halves cut-side down into the eggs while they're still slightly runny on top, and continue cooking for another 2-3 minutes until the eggs are mostly set.
  5. Add Cheese and Toppings: Sprinkle the cheese slices over the eggs, then layer on the crispy bacon, lettuce, tomato slices, and red onion.
  6. Fold and Serve: Carefully fold the cooked egg around the bagel halves to enclose all the fillings, then transfer to a plate and serve immediately while warm.
