Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • Pinch of salt
  • Optional: 1/2 tsp cinnamon
  • Powdered sugar and extra zest for garnish

Instructions

  1. Prepare a baking sheet with parchment paper or a silicone mat. Set aside.
  2. In a medium saucepan, melt butter with sugar and milk over medium heat. Stir constantly until the mixture boils. Let boil for 1 minute.
  3. Remove from heat and stir in vanilla, lemon juice, zest, salt, and optional cinnamon.
  4. Add rolled oats and mix well until fully coated.
  5. Drop spoonfuls of the mixture onto the prepared surface. Flatten slightly if desired.
  6. Let cookies cool at room temperature for 20–30 minutes or refrigerate for 10–15 minutes to set.
  7. Optionally, dust with powdered sugar and extra zest before serving.
