- 2 cups old-fashioned rolled oats
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- Pinch of salt
- Optional: 1/2 tsp cinnamon
- Powdered sugar and extra zest for garnish
Instructions
- Prepare a baking sheet with parchment paper or a silicone mat. Set aside.
- In a medium saucepan, melt butter with sugar and milk over medium heat. Stir constantly until the mixture boils. Let boil for 1 minute.
- Remove from heat and stir in vanilla, lemon juice, zest, salt, and optional cinnamon.
- Add rolled oats and mix well until fully coated.
- Drop spoonfuls of the mixture onto the prepared surface. Flatten slightly if desired.
- Let cookies cool at room temperature for 20–30 minutes or refrigerate for 10–15 minutes to set.
- Optionally, dust with powdered sugar and extra zest before serving.
