Description

A creamy, tangy whipped feta spread topped with sweet, roasted strawberries, drizzled with honey, and finished with fresh mint. This dish is a stunning and easy appetizer or snack that feels gourmet with minimal effort.


Ingredients

  • 8 oz block feta cheese, in brine
  • 4 oz cream cheese, softened
  • 1 pint fresh strawberries, hulled and halved
  • 1 tbsp olive oil
  • 12 tbsp honey (to taste)
  • Fresh mint leaves, for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place halved strawberries on a baking sheet and drizzle with olive oil. Toss gently.
  3. Roast strawberries for 15–18 minutes, until soft and slightly caramelized. Let cool slightly.
  4. In a food processor, combine feta and cream cheese. Blend until smooth and creamy.
  5. Spread whipped feta on a serving plate in swirls.
  6. Top with roasted strawberries and any juices from the pan.
  7. Drizzle with honey.
  8. Garnish with fresh mint leaves and a few cracks of black pepper.
  9. Serve with toasted bread, crackers, or fresh vegetables.
