- 12 oz spaghetti
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 oz cream cheese (softened)
- 1 cup heavy cream
- ½ cup chicken broth
- 2 cloves garlic (minced)
- 2 tbsp butter
- 1 tsp paprika
- Salt & black pepper (to taste)
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Cook the spaghetti – Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Cook the chicken – In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chicken, season with salt, black pepper, and paprika, and cook for 5-7 minutes until golden and cooked through. Remove from skillet and set aside.
- Prepare the cheese sauce – In the same skillet, melt the remaining butter and sauté the minced garlic for about 30 seconds until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Reduce heat to low and add the cream cheese, stirring until fully melted.
- Add the cheese – Slowly mix in the cheddar and mozzarella cheeses, stirring constantly until melted and smooth. If the sauce is too thick, add a little reserved pasta water or extra broth to loosen it.
- Combine everything – Return the cooked chicken to the skillet and mix well. Add the cooked spaghetti, tossing to coat every strand in the creamy cheese sauce.
- Bake (optional) – Transfer to a greased baking dish, sprinkle extra cheese on top, and bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.
- Serve and enjoy – Garnish with fresh parsley and serve hot.
