Dry Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional)
Wet Ingredients:
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) sour cream or Greek yogurt
- 3 medium overripe bananas, mashed (about 1 ½ cups)
Add-ins:
- ¾ cup chopped walnuts (plus extra for topping, optional)
Optional Glaze:
- ½ cup powdered sugar
- 1–2 tablespoons milk or cream
- Splash of vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a separate large bowl, cream together butter and sugar until fluffy.
- Beat in eggs one at a time, then add vanilla and sour cream.
- Stir in mashed bananas until combined.
- Gently fold in dry ingredients until just mixed—do not overmix.
- Fold in chopped walnuts.
- Pour batter into loaf pan and smooth the top. Sprinkle with extra walnuts if desired.
- Bake for 55–65 minutes, or until a toothpick comes out clean.
- Cool in pan for 10–15 minutes, then transfer to a wire rack.
- (Optional) Drizzle with glaze once fully cooled.
