  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)

Wet Ingredients:

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) sour cream or Greek yogurt
  • 3 medium overripe bananas, mashed (about 1 ½ cups)

Add-ins:

  • ¾ cup chopped walnuts (plus extra for topping, optional)

Optional Glaze:

  • ½ cup powdered sugar
  • 12 tablespoons milk or cream
  • Splash of vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate large bowl, cream together butter and sugar until fluffy.
  4. Beat in eggs one at a time, then add vanilla and sour cream.
  5. Stir in mashed bananas until combined.
  6. Gently fold in dry ingredients until just mixed—do not overmix.
  7. Fold in chopped walnuts.
  8. Pour batter into loaf pan and smooth the top. Sprinkle with extra walnuts if desired.
  9. Bake for 55–65 minutes, or until a toothpick comes out clean.
  10. Cool in pan for 10–15 minutes, then transfer to a wire rack.
  11. (Optional) Drizzle with glaze once fully cooled.
