For the Chicken and Glaze:
- 1 lb boneless, skinless chicken breast or thighs, cubed
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 tbsp honey
- 3 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tsp apple cider or rice vinegar (optional)
For the Pasta and Parmesan Cream:
- 8 oz rotini or fusilli pasta
- 1 tbsp butter
- 1 garlic clove, minced
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan
- 1/4 tsp black pepper
- Salt, to taste
- Reserved pasta water (about 1/2 cup)
Optional Garnishes:
- Fresh parsley, chopped
- Extra Parmesan, for topping
- Cracked black pepper
Instructions
- Boil the Pasta:
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water. Drain and set aside.
- Cook the Chicken:
- Heat olive oil in a skillet over medium-high. Season and sear chicken until golden and cooked through. Remove and set aside.
- Make Honey Garlic Glaze:
- In the same pan, add honey, garlic, and soy sauce. Simmer for 2 minutes. Add chicken back to coat in the glaze. Optional: stir in vinegar.
- Prepare Parmesan Cream Sauce:
- In a saucepan, melt butter. Add garlic, cook 30 seconds. Add cream and simmer. Stir in Parmesan, pepper, and salt until smooth.
- Combine:
- Add pasta to the Parmesan sauce. Stir to coat. Use pasta water to loosen if needed. Top with glazed chicken and garnish.
