For the Chicken and Glaze:

  • 1 lb boneless, skinless chicken breast or thighs, cubed
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tsp apple cider or rice vinegar (optional)

For the Pasta and Parmesan Cream:

  • 8 oz rotini or fusilli pasta
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan
  • 1/4 tsp black pepper
  • Salt, to taste
  • Reserved pasta water (about 1/2 cup)

Optional Garnishes:

  • Fresh parsley, chopped
  • Extra Parmesan, for topping
  • Cracked black pepper

Instructions

  1. Boil the Pasta:
    • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water. Drain and set aside.
  2. Cook the Chicken:
    • Heat olive oil in a skillet over medium-high. Season and sear chicken until golden and cooked through. Remove and set aside.
  3. Make Honey Garlic Glaze:
    • In the same pan, add honey, garlic, and soy sauce. Simmer for 2 minutes. Add chicken back to coat in the glaze. Optional: stir in vinegar.
  4. Prepare Parmesan Cream Sauce:
    • In a saucepan, melt butter. Add garlic, cook 30 seconds. Add cream and simmer. Stir in Parmesan, pepper, and salt until smooth.
  5. Combine:
    • Add pasta to the Parmesan sauce. Stir to coat. Use pasta water to loosen if needed. Top with glazed chicken and garnish.
