Ingredients
1 lb lean ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning or homemade (1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika, 1/2 tsp oregano, salt & pepper)
1/4 cup tomato sauce or salsa
1 tbsp olive oil
1 cup long-grain white rice
2 cups water or chicken broth
1/2 tsp salt
1/2 tsp cumin (optional)
1 can black beans, drained and rinsed
1 1/2 cups shredded cheddar or Mexican blend cheese
1/2 cup sour cream
1/2 cup guacamole
1/2 cup pico de gallo or diced tomatoes
Fresh cilantro, chopped (optional)
6 large flour tortillas (10-inch burrito size)
Instructions
1. Bring water or broth to a boil, stir in rice, salt, and optional cumin. Cover and simmer for 15–18 minutes until fluffy.
2. Heat olive oil in a skillet. Sauté chopped onion for 3–4 minutes. Add garlic and cook for 1 more minute.
3. Add ground beef. Brown it for 6–8 minutes, breaking it apart. Drain any excess grease.
4. Stir in taco seasoning and tomato sauce or salsa. Simmer for 3–4 minutes until well blended.
5. Warm tortillas in the microwave wrapped in a damp paper towel or in a dry skillet for a few seconds each side.
6. On each tortilla, layer rice, beef, black beans, cheese, and desired toppings (sour cream, guac, pico, cilantro).
