  • 2 tablespoons olive oil or unsalted butter
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth (low sodium)
  • 2 cups cooked, shredded chicken
  • 2 teaspoons dried thyme or Italian seasoning
  • Salt and pepper to taste
  • 2 cups wide egg noodles
  • Fresh parsley, chopped (optional)
  • Optional: bay leaf, lemon juice

Instructions

  1. Heat oil or butter in a large pot over medium heat. Sauté diced onion for 3–4 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in carrots and celery, cooking for 5–6 minutes.
  4. Pour in chicken broth and add seasoning. Bring to a gentle boil.
  5. Add shredded chicken and optional bay leaf. Simmer for 15–20 minutes.
  6. Stir in egg noodles and cook for 8–10 minutes until tender.
  7. Remove bay leaf, adjust seasoning, and add optional lemon juice.
  8. Garnish with chopped parsley and serve hot.
