- 2 tablespoons olive oil or unsalted butter
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 3 large carrots, peeled and sliced
- 2 celery stalks, sliced
- 8 cups chicken broth (low sodium)
- 2 cups cooked, shredded chicken
- 2 teaspoons dried thyme or Italian seasoning
- Salt and pepper to taste
- 2 cups wide egg noodles
- Fresh parsley, chopped (optional)
- Optional: bay leaf, lemon juice
Instructions
- Heat oil or butter in a large pot over medium heat. Sauté diced onion for 3–4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in carrots and celery, cooking for 5–6 minutes.
- Pour in chicken broth and add seasoning. Bring to a gentle boil.
- Add shredded chicken and optional bay leaf. Simmer for 15–20 minutes.
- Stir in egg noodles and cook for 8–10 minutes until tender.
- Remove bay leaf, adjust seasoning, and add optional lemon juice.
- Garnish with chopped parsley and serve hot.
