12 large marshmallows

Instructions

1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.

2. Add peanut butter, egg, and vanilla extract. Mix until well combined.

3. In a separate bowl, whisk flour, baking powder, baking soda, and salt.

4. Gradually mix dry ingredients into the wet mixture until just combined.

5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

6. Scoop dough into balls and place them 2 inches apart on baking sheets.

7. Bake for 9–11 minutes until edges are golden and centers are soft.

8. Immediately press a large marshmallow into each cookie. Let cool 2 minutes before moving.

9. Melt white chocolate in 30-second intervals, stirring until smooth.

10. Spoon melted chocolate over each marshmallow to resemble melting snow.

11. Use decorating gels to draw eyes, nose, smile, and buttons.

12. Allow decorations to set at room temp or chill briefly to speed up.
