  • 6 oz cream cheese, room temperature
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Colby Jack cheese
  • 1/2 cup mayonnaise
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 3 tbsp chopped pimentos

Instructions

  1. In a medium bowl, use a hand mixer to whip the softened cream cheese until light and fluffy.
  2. Add the shredded cheddar, Colby Jack, mayonnaise, cayenne pepper, garlic powder, salt, and pepper. Continue mixing on medium speed until well combined and smooth.
  3. Fold in the chopped pimentos and mix until evenly distributed.
  4. Transfer the pimento cheese to an airtight container and refrigerate until ready to use.
    The spread can be stored in the refrigerator for up to 3 months.
  5. To serve, let it soften at room temperature for a few minutes for easy spreading.
