- 6 small English cucumbers
- 1 1/2 cups apple cider vinegar
- 1 1/2 cups water
- 3/4 cup brown sugar
- 1 tablespoon pickling spice
Instructions
- Using a mandolin, slice the cucumbers into 1/4 inch thick slices. Place them into canning jars and set aside.
- In a small saucepan, combine the apple cider vinegar, water, brown sugar, and pickling spice. Bring the mixture to a boil and cook until the sugar dissolves.
- Remove from heat and allow the brine to cool for 5 minutes.
- Pour the brine into the jars, filling them about 3/4 full, covering the cucumbers.
- Secure the lids on the jars and refrigerate for at least 1 hour or overnight for better flavor.
- Serve the pickles chilled, as a snack or with your favorite dishes.

- For maximum flavor, allow the pickles to marinate overnight.
