Ingredients

  • 6 small English cucumbers
  • 1 1/2 cups apple cider vinegar
  • 1 1/2 cups water
  • 3/4 cup brown sugar
  • 1 tablespoon pickling spice

Instructions

  1. Using a mandolin, slice the cucumbers into 1/4 inch thick slices. Place them into canning jars and set aside.
  2. In a small saucepan, combine the apple cider vinegar, water, brown sugar, and pickling spice. Bring the mixture to a boil and cook until the sugar dissolves.
  3. Remove from heat and allow the brine to cool for 5 minutes.
  4. Pour the brine into the jars, filling them about 3/4 full, covering the cucumbers.
  5. Secure the lids on the jars and refrigerate for at least 1 hour or overnight for better flavor.
  6. Serve the pickles chilled, as a snack or with your favorite dishes.
