  • 2 pounds fresh figs, cut in quarters, stems removed
  • 1 cup granulated sugar
  • Juice of one lemon
  • 1 teaspoon vanilla extract
  • 1/4 cup water

Instructions

  • In a medium saucepan, combine the quartered figs, sugar, lemon juice, and vanilla extract. Stir to coat the figs evenly.
  • Cook the mixture over medium heat, stirring frequently, until the sugar is dissolved, and the figs begin to release their juices (about 5-7 minutes).
  • Reduce the heat to low and add the water. Simmer the jam for 20 minutes, stirring occasionally, until the figs are soft, and the juices start to thicken.
  • Turn off the heat and spoon the jam into two clean pint-sized jars. Leave a little space at the top to avoid overflow.
  • Close the jars tightly and allow the jam to cool to room temperature.
  • Store the jam in the refrigerator for up to 2 months or freeze it for longer storage.

Notes

  • For a smoother jam, you can mash the figs with a fork or use an immersion blender during cooking.
  • The jam thickens more as it cools, so don’t overcook it.
  • To freeze, transfer the cooled jam to freezer-safe containers, leaving room at the top. Freeze for up to 6 months.
