Ingredients

Scale

1 large head broccoli (or 4 cups florets)

2 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 cup seasoned breadcrumbs

2 tablespoons grated Parmesan cheese

Zest of 1/2 lemon

Pinch red pepper flakes (optional)

Instructions

1. Preheat your oven to 425°F (220°C) and position the rack in the center.

2. Trim the broccoli into similar-sized florets and dry them thoroughly.

3. Toss broccoli in a large bowl with olive oil, salt, pepper, garlic powder, lemon zest, and red pepper flakes if using.

4. Spread the broccoli on a parchment-lined sheet in a single layer.

5. Roast for 18–22 minutes, flipping once halfway through, until edges are crisp and golden.

6. Sprinkle breadcrumbs and Parmesan over the broccoli right after removing from oven.

7. Return to oven for 2–3 minutes if extra crispiness is desired.

8. Serve on a platter with a fresh squeeze of lemon.

Notes

Drying the broccoli completely before roasting is essential to getting crispy edges.

You can swap Parmesan for nutritional yeast for a dairy-free version.

Panko crumbs work great if you prefer extra crunch.
