Ingredients
For the Stir-Fry:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 medium carrot, sliced
- 2 tablespoons vegetable oil
- 1 teaspoon sesame seeds (optional, for garnish)
- 2 green onions, chopped (for garnish)
For the Teriyaki Sauce:
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch mixed with 2 tablespoons water

Prepare the Sauce: In a small bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and grated ginger. In a separate dish, mix cornstarch with water, then stir it into the sauce mixture. Set aside.

Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove from the pan and set aside.

Sauté the Vegetables: In the same pan, add the remaining 1 tablespoon of vegetable oil. Toss in the chopped bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Combine Everything: Return the cooked chicken to the pan. Pour the prepared teriyaki sauce over the chicken and vegetables. Stir well to coat everything evenly. Cook for an additional 1-2 minutes until the sauce thickens.
