Ingredients

1.5 lbs sirloin or ribeye steak

Salt and freshly cracked black pepper to taste

1 tbsp olive oil

2 tbsp unsalted butter

4 cloves garlic minced

2 tbsp unsalted butter

1 cup heavy cream

0.5 cup freshly grated parmesan cheese

0.25 tsp cracked black pepper

Pinch crushed red pepper flakes (optional)

Salt to taste

1 tbsp fresh parsley chopped


Instructions

1. Pat the steak cubes dry using paper towels and season all sides with salt and pepper. Let sit at room temperature for 20–30 minutes.

2. Heat olive oil in a large cast-iron skillet over high heat. Sear the steak bites in a single layer for 2–3 minutes per side, working in batches if needed. Transfer to a plate and cover loosely.

3. Reduce heat to medium. Add 2 tbsp butter and 4 cloves minced garlic to the same skillet. Stir for 30 seconds until fragrant. Add the steak back in and toss to coat. Remove steak again to prevent overcooking.

4. In the same skillet, melt another 2 tbsp butter. Add 2 minced garlic cloves and sauté for 30 seconds. Pour in heavy cream and let simmer for 2–3 minutes to slightly thicken.

5. Stir in grated parmesan, black pepper, and red pepper flakes. Stir until the sauce is smooth. Add salt to taste.

6. Return the steak bites to the skillet and toss in the parmesan cream sauce. Heat for 1–2 minutes.

7. Garnish with chopped parsley and serve immediately with your favorite sides.
