Ingredients

1 pack instant ramen noodles

1 tablespoon soy sauce

1 teaspoon brown sugar

1 teaspoon sriracha or chili garlic sauce

1/2 teaspoon sesame oil

2 large eggs, beaten

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/2 teaspoon sesame seeds

1 stalk green onion, chopped (optional)


Instructions

1. Boil water and cook the ramen noodles according to the package, undercooking them by 30 seconds. Drain and set aside.

2. Heat a little oil in a skillet over medium heat. Scramble the eggs until just set. Remove and set aside.

3. In the same skillet, sauté minced garlic until fragrant, about 30 seconds.

4. Add soy sauce, brown sugar, sriracha, and sesame oil. Stir and let simmer for 1–2 minutes.

5. Add the cooked noodles and toss to coat with the sauce. Stir-fry for 1–2 minutes.

6. Return the scrambled eggs to the skillet and mix them into the noodles.

7. Remove from heat, garnish with sesame seeds, red pepper flakes, and green onions if desired. Serve immediately.

Notes

For firmer noodles, slightly undercook them before stir-frying.

Use tamari for a gluten-free option without compromising flavor.

Stir the sauce constantly to prevent sugar from burning.
