Instructions
1. Cream the butter and brown sugar in a mixing bowl until light and fluffy.
2. Add eggs one at a time, mixing well, then stir in vanilla extract.
3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
4. Gradually mix dry ingredients into the wet mixture until just combined.
5. Fold in chopped dates, nuts, and optional coconut or chocolate chips.
6. Chill the dough for 10–15 minutes to help reduce spreading.
7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
