Ingredients

Scale
  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup granulated sugar
  • 2 tbsp white vinegar
  • 1 tbsp yellow mustard
  • 3 hard-boiled eggs, chopped
  • 2 celery stalks, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup onion, finely diced
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to the package instructions until al dente. Drain and rinse under cold water. Set aside.
  2. In a large bowl, whisk together mayonnaise, sugar, white vinegar, yellow mustard, salt, and pepper until smooth and creamy.
  3. Stir in the chopped hard-boiled eggs, celery, red bell pepper, and onion, ensuring all ingredients are evenly coated.
  4. Gently fold the cooked and cooled macaroni into the dressing mixture, stirring carefully to avoid breaking the pasta.
  5. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld.
  6. Before serving, stir the salad, adjust the seasoning if needed, and serve chilled. Enjoy!
