Ingredients
1 large chicken breast
2 packs ramen noodles
3 cups chicken broth
1/2 cup heavy cream
2 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon chili paste (Gochujang or Sambal Oelek)
2 tablespoons soy sauce
1 teaspoon sesame oil
2 soft-boiled eggs
1/2 cup chopped green onions
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon sesame seeds (optional)
Instructions
1. Season chicken with salt, pepper, and a bit of chili paste. Sear in sesame oil for 5–6 minutes per side. Let rest, then slice thinly.
2. In a pot, heat sesame oil and sauté garlic and ginger until fragrant.
3. Add chili paste and stir for 30 seconds. Pour in chicken broth and bring to a simmer.
4. Stir in soy sauce and heavy cream. Simmer gently for 10–15 minutes.
5. Cook ramen noodles according to package instructions. Drain and set aside.
6. Boil eggs for 6.5 to 7 minutes, transfer to ice bath, peel, and halve.
7. Assemble by placing noodles in bowls, ladling over the hot broth, and topping with chicken, eggs, green onions, and sesame seeds.
Notes
For a dairy-free version, substitute heavy cream with coconut milk.
To make it vegetarian, use tofu and vegetable broth instead of chicken.
