Ingredients
- 2 boneless, skinless chicken breasts, diced
- 2 tbsp Cajun seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1/4 cup unsalted butter
- 2 garlic cloves, minced
- 2 tbsp honey
- 1/2 cup heavy cream
- 8 oz fettuccine (or pasta of choice)
- Reserved pasta water (as needed)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and reserve 1/2 cup of the pasta water.
- Season diced chicken with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium. Melt the butter, then add minced garlic and cook for 30 seconds until fragrant.
- Stir in honey and let simmer for 1 minute.
- Add heavy cream and stir until smooth. Let simmer 2–3 minutes until slightly thickened.
- Return the cooked chicken to the skillet and toss to coat in sauce.
- Add drained pasta to the pan and toss gently to combine. Use reserved pasta water to loosen sauce if needed.
- Serve hot, optionally garnished with chopped parsley or green onions.
