For the Chicken:

  • 2 boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the Pasta:

  • 8 oz fettuccine
  • Water & salt for boiling

For the Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)

For Garnish:

  • Fresh parsley, chopped
  • Additional grated Parmesan (optional)

Instructions

  1. Season chicken with Cajun seasoning.
  2. Heat olive oil and butter in a skillet. Sear chicken on medium-high heat for 5–6 minutes per side until cooked through. Let rest.
  3. Boil salted water and cook fettuccine until al dente. Reserve ¼ cup of pasta water and drain.
  4. In the same skillet, melt butter and sauté garlic.
  5. Stir in chicken broth, scraping up browned bits. Add cream and paprika.
  6. Simmer, then stir in Parmesan cheese. Season to taste.
  7. Add pasta and reserved water to sauce. Toss to coat.
  8. Slice chicken and place over pasta. Garnish with parsley and more Parmesan.
