For the Chicken:
- 2 boneless skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
For the Pasta:
- 8 oz fettuccine
- Water & salt for boiling
For the Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 teaspoon smoked paprika (optional)
- Salt and black pepper, to taste
- ¼ teaspoon red pepper flakes (optional)
For Garnish:
- Fresh parsley, chopped
- Additional grated Parmesan (optional)
Instructions
- Season chicken with Cajun seasoning.
- Heat olive oil and butter in a skillet. Sear chicken on medium-high heat for 5–6 minutes per side until cooked through. Let rest.
- Boil salted water and cook fettuccine until al dente. Reserve ¼ cup of pasta water and drain.
- In the same skillet, melt butter and sauté garlic.
- Stir in chicken broth, scraping up browned bits. Add cream and paprika.
- Simmer, then stir in Parmesan cheese. Season to taste.
- Add pasta and reserved water to sauce. Toss to coat.
- Slice chicken and place over pasta. Garnish with parsley and more Parmesan.
