Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C). Grease a mini muffin tin with butter or non-stick spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
  4. Combine Wet and Dry Ingredients: Add the wet mixture to the dry ingredients and gently fold until just combined. Add in the corn kernels (if using) and fold them in.
  5. Fill the Muffin Tin: Using a spoon or cookie scoop, fill each mini muffin cup almost to the top.
