2 ½ cups all-purpose flour

1 cup warm water

1 tablespoon sugar

2 teaspoons active dry yeast

1 teaspoon salt

2 tablespoons olive oil

2 medium yellow onions, sliced

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 tablespoons fresh chives (optional)


Instructions

1. In a large bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until it becomes foamy.

2. Add the flour and salt to the yeast mixture and stir to combine. Add the olive oil and knead the dough until smooth and elastic, about 8-10 minutes. Cover and let the dough rise for 1 hour or until it has doubled in size.

3. While the dough is rising, heat olive oil in a skillet over medium heat. Add the sliced onions and cook slowly for 20-30 minutes, stirring often until golden and caramelized. Set aside to cool.

4. Punch down the dough and transfer it to a floured surface. Roll it into a 12×8 inch rectangle. Spread the caramelized onions evenly over the dough and sprinkle with both cheeses.

5. Roll the dough up like a jelly roll and pinch the seams to seal. Place it into a greased baking dish and let it rise for 30 minutes.

6. Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes, until the top is golden and the cheese is bubbly. Tap the bottom of the loaf—if it sounds hollow, it’s done.

7. Let the bread cool for 10 minutes before slicing. Enjoy warm!

Notes

For longer storage, you can freeze the bread. Slice it first, then wrap it tightly in plastic wrap and foil or place it in a freezer-safe bag. It will keep in the freezer for up to 3 months. When you’re ready to enjoy, simply thaw it at room temperature or heat slices in the oven for a few minutes to restore the freshness.
