  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 3 medium apples, peeled and diced
  • 2 tsp ground cinnamon (divided)
  • 1/8 tsp nutmeg (optional)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp granulated sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually mix in the dry ingredients to form a soft dough.
  6. Press two-thirds of the dough evenly into the bottom of the prepared pan.
  7. In a separate bowl, combine diced apples, 1 tsp cinnamon, nutmeg, lemon juice, and cornstarch. Mix until apples are fully coated.
  8. Spread the apple filling evenly over the crust.
  9. Crumble the remaining dough over the apples.
  10. Mix 2 tbsp sugar with 1 tsp cinnamon and sprinkle evenly on top.
  11. Bake for 35-40 minutes until the top is golden and filling is bubbly.
  12. Let cool completely before slicing into bars.
