This Slow Cooker Swiss Steak is a hearty, comforting dish made with tenderized beef, slow-cooked in a rich tomato-based sauce with carrots, celery, and onions. Perfect for an easy weeknight meal, this dish pairs well with mashed potatoes, rice, or crusty bread.

- 2 lbs round steak or chuck steak, tenderized
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (if using cornstarch)
Instructions
- Pat the beef dry and season with salt and pepper. Dredge each piece in flour, shaking off the excess.
- Heat oil in a large skillet over medium-high heat. Sear the steaks for about 2 minutes per side until golden brown. Transfer to the slow cooker.
- In the same skillet, sauté the onions, garlic, carrots, and celery for about 3 minutes. Transfer to the slow cooker.
- In a bowl, mix diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning. Pour over the beef and vegetables in the slow cooker.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is fork-tender.
- (Optional) If a thicker sauce is desired, mix cornstarch with water and stir it into the slow cooker during the last 30 minutes of cooking.
- Serve hot over mashed potatoes, rice, or with crusty bread. Enjoy!
