Description

This Slow Cooker Swiss Steak is a hearty, comforting dish made with tenderized beef, slow-cooked in a rich tomato-based sauce with carrots, celery, and onions. Perfect for an easy weeknight meal, this dish pairs well with mashed potatoes, rice, or crusty bread.

  • 2 lbs round steak or chuck steak, tenderized
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch)

Instructions

  1. Pat the beef dry and season with salt and pepper. Dredge each piece in flour, shaking off the excess.
  2. Heat oil in a large skillet over medium-high heat. Sear the steaks for about 2 minutes per side until golden brown. Transfer to the slow cooker.
  3. In the same skillet, sauté the onions, garlic, carrots, and celery for about 3 minutes. Transfer to the slow cooker.
  4. In a bowl, mix diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning. Pour over the beef and vegetables in the slow cooker.
  5. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is fork-tender.
  6. (Optional) If a thicker sauce is desired, mix cornstarch with water and stir it into the slow cooker during the last 30 minutes of cooking.
  7. Serve hot over mashed potatoes, rice, or with crusty bread. Enjoy!
