Ingredients

2 lbs boneless skinless chicken breasts

2 cans (10.5 oz each) cream of chicken soup

1 cup chicken broth

8 oz cream cheese, cubed

1 tsp onion powder

1 tsp garlic powder

1/2 tsp black pepper

1 tbsp cornstarch (optional, for thickening)

12 tbsp cold water (for cornstarch slurry)

2 tbsp chopped green onions (for garnish)


Instructions

1. Spray the inside of the slow cooker with non-stick spray. Place chicken breasts in the bottom.

2. In a bowl, whisk together cream of chicken soup, broth, cubed cream cheese, onion powder, garlic powder, and pepper until mostly smooth.

3. Pour the mixture over the chicken in the slow cooker.

4. Cover and cook on LOW for 6–7 hours or HIGH for 4 hours.

5. Once done, shred the chicken with two forks directly in the slow cooker and stir to coat with gravy.

6. If needed, mix cornstarch with cold water and stir in to thicken. Let cook 15–20 minutes more.

7. Garnish with chopped green onions and serve hot over mashed potatoes, noodles, or rice.

Notes

For a richer flavor, use boneless chicken thighs instead of breasts.

Let the shredded chicken sit in the gravy for 10–15 minutes before serving to absorb maximum flavor.

You can freeze leftovers for up to 3 months for future easy meals.
