3 cups shredded rotisserie chicken

8 medium tortillas

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

2 cups red enchilada sauce

1/2 cup sour cream

1/2 cup diced onion

1/2 cup diced green chilies

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh cilantro

1 lime cut into wedges


Instructions

1. Preheat oven to 375°F and lightly grease a 9×13 inch baking dish then spread a thin layer of enchilada sauce across the bottom

2. Combine shredded rotisserie chicken diced onion green chilies cumin chili powder smoked paprika garlic powder onion powder salt and pepper in a bowl

3. Mix in sour cream and a small amount of enchilada sauce until the chicken filling becomes creamy and well coated

4. Warm tortillas in the microwave wrapped in a damp towel so they become soft and flexible

5. Place about one third cup chicken mixture in each tortilla and sprinkle with cheese

6. Roll each tortilla tightly and place seam side down in the baking dish

7. Pour the remaining enchilada sauce evenly over the rolled tortillas

8. Sprinkle Monterey Jack and cheddar cheese across the top

9. Cover with foil and bake for 15 minutes then uncover and bake another 10 to 15 minutes until cheese is melted and bubbly

10. Allow enchiladas to rest 5 minutes before serving and garnish with cilantro and lime if desired

Notes

Warm tortillas before filling so they do not crack while rolling
