Ingredients

Scale

4 boneless skinless chicken breasts

Salt and black pepper to taste

2 tablespoons olive oil

3 garlic cloves minced

1 shallot finely chopped

1/2 cup chicken broth or dry white wine

5.2 oz Boursin Garlic & Fine Herbs cheese

1/2 cup heavy cream or half-and-half (optional)

1 teaspoon Dijon mustard (optional)

1 tablespoon fresh parsley chopped


Instructions

1. Pat chicken dry and season with salt and pepper.

2. Heat olive oil in a skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat and sauté shallot for 2–3 minutes. Add garlic and cook for 30 seconds.

4. Pour in chicken broth or wine and deglaze the pan, scraping up browned bits. Simmer 2–3 minutes.

5. Lower heat and stir in the Boursin cheese until melted. Add cream and Dijon if using. Simmer to thicken.

6. Return chicken to pan and spoon sauce over it. Simmer together for 3–5 minutes.

7. Turn off heat and garnish with fresh parsley. Serve hot with your favorite sides.

Notes

For extra depth, use white wine instead of broth when deglazing.

Make sure the Boursin melts on low heat to avoid separating.

Let the chicken rest a few minutes in the sauce off heat before serving for best flavor.
