Ingredients

1 ripe banana mashed

1 cup water

3/4 cup brown sugar packed

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

Pinch of salt

1/4 teaspoon banana extract (optional)


Instructions

1. Mash a ripe banana thoroughly until smooth with minimal lumps.

2. In a medium saucepan, combine mashed banana, water, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Whisk well.

3. Bring to a gentle simmer over medium heat, stirring occasionally. Once bubbling, reduce heat and simmer for 10–12 minutes, stirring frequently.

4. Remove from heat and stir in vanilla extract and optional banana extract.

5. Pour the syrup through a fine mesh strainer into a heat-safe container, pressing out as much liquid as possible.

6. Let it cool for 10–15 minutes. It will thicken slightly as it cools.

7. Transfer to a clean glass bottle or jar. Store in the fridge for up to 2 weeks. Shake before using.

Always strain the syrup for the smoothest texture.
