Ingredients
14 oz smoked sausage
2 medium zucchini
2 medium yellow squash
3 large carrots
3 medium red potatoes
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 ½ tsp Italian seasoning
½ tsp salt
½ tsp black pepper
2 tbsp fresh parsley (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line or grease a large sheet pan.
2. Slice sausage into ½-inch rounds. Chop all vegetables into similar bite-sized pieces.
3. Add sausage and veggies to a large mixing bowl. Drizzle with olive oil and season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss well to coat.
4. Spread mixture onto the sheet pan in a single layer without overcrowding.
