  • 1 lb sea scallops (dry-packed)
  • 1 bunch of asparagus, trimmed
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp chopped fresh chives or parsley

Instructions

  1. Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper. Roast for 10–12 minutes.
  2. Pat scallops very dry with paper towels and season with salt and pepper.
  3. In a saucepan over medium heat, melt 1 tbsp butter. Add garlic and sauté until fragrant. Stir in cream and lemon juice. Simmer 5–7 minutes until thickened. Set aside.
  4. In a hot skillet, melt remaining 1 tbsp butter with a splash of olive oil. Sear scallops 2–3 minutes per side until golden brown.
  5. Spoon sauce into bowls. Add roasted asparagus and top with scallops.
  6. Garnish with fresh herbs and serve immediately.
