Description

Savory Hand Pies are flaky golden pockets filled with a rich blend of sautéed mushrooms, caramelized onions, herbs, and cream. Perfect as a snack, appetizer, or light meal, these hand pies offer a gourmet flavor wrapped in buttery puff pastry. Easy to customize and freezer-friendly, they’re ideal for both weekday meals and special occasions.

Ingredients

Scale

2 tablespoons olive oil

1 tablespoon unsalted butter

1 medium yellow onion, thinly sliced

2 cups mushrooms (cremini or button), finely chopped

2 cloves garlic, minced

1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

salt and black pepper to taste

2 tablespoons all-purpose flour

1⁄3 cup vegetable broth or water

1⁄4 cup heavy cream or full-fat milk

2 sheets frozen puff pastry, thawed

1 egg, beaten

fresh thyme sprigs

sea salt flakes for sprinkling

Instructions

1. Heat olive oil and butter in a skillet over medium heat. Add the sliced onions and cook for 8–10 minutes until caramelized.

2. Stir in mushrooms, garlic, thyme, salt, and pepper. Sauté until the mushrooms release and evaporate their moisture, about 6–8 minutes.

3. Sprinkle flour into the mixture, stir, and cook for 1–2 minutes. Add broth and cream, simmer for 3–4 minutes until thickened. Let cool completely.

4. Roll out thawed puff pastry and cut each sheet into 6 squares (3×3 inches).

5. Place 1 to 1½ tablespoons of filling on half the squares. Brush edges with water, cover with remaining squares, and crimp with a fork.

6. Brush tops with egg wash and sprinkle with optional sea salt or thyme.

7. Bake at 400°F (200°C) for 20–25 minutes until golden and puffed.

8. Let cool 5 minutes before serving.

Notes

Always cool your filling completely before assembling to avoid soggy pastry.

For extra flavor, try adding a handful of shredded cheese like Gruyère or sharp cheddar to the filling.

Freeze unbaked pies for up to 2 months and bake directly from frozen—just add a few extra minutes to the baking time.
