Ingredients
1 tablespoon olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
500g ground beef
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce (optional)
1/2 cup beef broth
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon dried thyme
1 tablespoon all-purpose flour
2 sheets puff pastry, thawed
1 egg, beaten
1/2 cup frozen peas or corn (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sautéing for 2–3 minutes until softened.
2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
3. Stir in tomato paste, Worcestershire sauce, soy sauce, paprika, thyme, salt, and pepper.
4. Pour in beef broth and sprinkle flour over the mixture. Stir well and simmer for 5–7 minutes until thickened. Let the filling cool completely.
5. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
6. Roll out puff pastry and cut into equal-sized rounds or squares.
7. Spoon 1–2 tablespoons of cooled beef filling onto half of the pastry shapes. Add peas or corn if using.
8. Brush pastry edges with egg wash, then place the remaining pastry shapes on top.
9. Press edges to seal, crimp with a fork, and cut a small slit or cross in the center of each pie.
10. Brush the tops with egg wash and place the pies on the prepared baking sheet.
11. Bake for 20–25 minutes or until golden brown and puffed.
12. Allow to cool slightly before serving.
Notes
Always let the beef filling cool completely before assembling the pies to avoid soggy pastry.
Keep the puff pastry cold before working with it so it puffs up beautifully during baking.
Make sure to cut a small vent in each pie to release steam and avoid bursting.
