- 1 lb Italian sausage (mild or spicy)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp Italian seasoning
- Salt and freshly ground black pepper, to taste
- 9 oz cheese tortellini (refrigerated or frozen)
- 1 cup heavy cream
- 2 cups fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese (optional, for topping)
- 1 tbsp olive oil (if needed for sautéing)
Instructions
- In a large pot, cook the sausage over medium heat until browned and cooked through. Remove and set aside.
- In the same pot, sauté the diced onion until soft (add oil if needed). Add garlic and cook for 30 seconds.
- Pour in the chicken broth and stir to deglaze the pot. Add Italian seasoning, salt, and pepper.
- Bring to a simmer and add tortellini. Cook for 5–7 minutes, or until tortellini is tender.
- Reduce heat and stir in heavy cream.
- Add fresh spinach and let it wilt in the hot soup.
- Return the sausage to the pot and stir to combine.
- Taste and adjust seasoning as needed. Serve hot with Parmesan on top if desired.
