Filling:
- 500g (1 lb) ground sausage meat
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 tbsp fresh parsley, chopped
- 1/2 tsp dried thyme or sage (optional)
- Salt and pepper, to taste
- 1 tbsp breadcrumbs
- 1 tsp Dijon or wholegrain mustard (optional)
Pastry:
- 1 sheet puff pastry (thawed if frozen)
- 1 egg, beaten (for egg wash)
Topping (Optional):
- Sesame or nigella seeds
- Flaky sea salt
Instructions
- In a bowl, mix sausage meat, onion, garlic, parsley, thyme, breadcrumbs, mustard, salt, and pepper.
- Preheat oven to 200°C (390°F) or 180°C (350°F) fan. Line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface. Cut into 2 or 3 long strips.
- Form the sausage mixture into a log along one edge of each pastry strip.
- Brush the opposite edge with egg wash, then roll tightly to seal. Place seam side down.
- Cut into mini rolls (1.5 to 2 inches wide). Arrange on baking tray.
- Brush tops with egg wash. Sprinkle with seeds or sea salt.
- Bake for 20–25 minutes or until golden and cooked through.
