  • 1 pound breakfast sausage (turkey, or plant-based)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • 1 can refrigerated biscuit dough (8-count, large biscuits)
  • 1 tablespoon melted butter (optional, for brushing)
  • 1 tablespoon chopped parsley or chives (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. In a large skillet over medium heat, cook the sausage, breaking it up with a spatula, until fully browned. Drain excess grease if needed.

  3. Sprinkle flour over the cooked sausage and stir to coat. Cook for 1 minute.

  4. Gradually pour in the milk, stirring constantly. Simmer the mixture until it thickens into a gravy, about 5–7 minutes. Season with salt and pepper.

  5. Pour the sausage gravy into the prepared baking dish and spread evenly.

  6. Cut each biscuit into halves or quarters and arrange them on top of the gravy.

  7. (Optional) Brush the tops of the biscuits with melted butter for a golden finish.

  8. Bake for 25–30 minutes, until biscuits are puffed and golden brown.

  9. Let the casserole rest for 5 minutes before serving. Garnish with fresh herbs if desired.
