2 sheets puff pastry, thawed

6 large eggs

6 sausage patties, cooked

1 cup shredded cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten (for egg wash)


Instructions

1. Cook the sausage patties in a skillet over medium heat until browned and cooked through. Set aside on paper towels to drain.

2. Whisk the eggs with salt and pepper. Scramble them in a skillet over medium-low heat until just barely set and still glossy. Remove from heat.

3. Roll out the puff pastry on a floured surface and cut each sheet into three equal rectangles.

4. Place a spoonful of scrambled eggs in the center of each rectangle, top with a sausage patty, and sprinkle with cheddar cheese.

5. Fold the pastry over the filling, tucking in the sides, and roll like a burrito. Place seam-side down on a parchment-lined baking sheet.
